Bizerba is presenting state-of-the-art slicers for safe hygiene at the IFFA 2010 in Frankfurt
(firmenpresse) - Balingen, May 7th, 2010 – At the IFFA 2010, the leading international trade fair for the meat industry, technical manufacturer Bizerba is presenting a strong range of slicers: Among others, there is the VS 12 D precision slicer with its new surface refinement, the fully-automated A 400 slicer, the SE 12 slicer, the intelligent A510 slicer with globally unique weighing function and the FK 23 meat and bone saw. In addition, Bizerba is presenting modern steak machines and strip cutters. Visitors can get an idea of the diversity of this product portfolio between 8th and 13th May 2010 in Hall 6, Stand C60.
Hygiene is a Top Priority at Bizerba
There are many causes for the premature deterioration of meat products. As well as improper storage and transportation, a lack of hygiene during manufacturing can also be responsible. In order to be able to ensure that the food safety criteria in accordance with EC Regulation No. 2073/2005 are complied with, the food companies must take measures on all levels – even when slicing.
Andreas Gmelin, Director Food Processing at Bizerba, explains, “The hygiene measures in food operations are essentially made up of two columns: the prevention of a microbial and chemical contamination of food and the prevention of germ multiplication. Bizerba slicers are adjusted to these high demands. All parts which come into contact with the product that is being sliced are made of high-quality anodised aluminium or stainless steel. The ergonomic structure of the machinery makes it possible to easily reach and clean all components. The risks of contamination are reduced for the operator as a result.” The use of Bizerba stainless steel preservative is also a good idea here, as its static inhibitors actively prevent new contamination.
Self-Cleaning Surfaces with Lotus Effect
As a further plus point in terms of hygiene, the new Ceraclean surface refinement, which is used for the VS 12 slicer, is also proving its worth. Ceraclean was developed to coat metal objects, for which extremely high resistance to both wear and chemicals is required. It is made of synthetic resin in connection with ceramic components and polytetrafluoroethylene and uses the water and dirt-repellent lotus effect. The good anti-friction and non-stick properties are another plus for use in the food service. Ceraclean is 30 times harder than the conventionally used anodised aluminium, has up to 20 percent higher antifriction properties than conventional anodised aluminium, is dishwasher-proof and very resistant to cleaning agents of all kinds.
Decorating Talent: The VS 12 D Precision Slicer with New Surface
Be it in the butchers, the food trade, catering or the delicatessen: anywhere where the appetising and decorative presentation of sliced produce is needed together with a high level of flexibility, the automatic VS 12 D precision slicer can be used. It is particularly suitable for slicing sausages, ham, bacon, smoked meats, joints and roulades. According to Gmelin, it is ideal for processing customer orders or preparing for the rush of customers on the weekend.
“Up to now, every plate of cold meats has required a certain decorating talent. The VS 12 D creates completely new opportunities here by automatically positioning the slices ready-to-serve with no hand contact. The different positions can be saved using direct buttons,” explains Andreas Gmelin, Director Food Processing at Bizerba.
The machine can fan out in three rows lengthways and breadthways and also position the slices in a round shape on the cold cut plate. “The machine is extremely robust, extremely resilient and corrosion-proof even in permanent automatic operation,” continues Gmelin. Smooth grooves ensure that the slices can slide cleanly and effortlessly. The leftovers tray, the knife cover and the chain frame can be quickly removed for cleaning. The knife can be sharpened with a compact grinder.
Self-Cleaning at the Touch of a Button: the A 400 Automatic Slicer
The A 400 has a clear control panel with splash-proof keypad and a graphic LCD display. Number of carriage strokes, thickness, presentation and other parameters can be saved in a programme. In total, 200 different operating programmes can easily be called up by entering the number.
“Even the cleaning programme can be started at the touch of a button. The cutting thickness is automatically closed, the carriage is released so it can be tilted and all other machine functions are locked. It is just as easy to command the machine to sharpen the knife. The cutting thickness to attach the sharpening unit is then automatically opened. With another push of a button, the knife motor starts to grind”.
The A 400 can also be equipped with a conveyor band, making it ideal for integrating into a continual operating cycle for slicing products in advance.
The SE 12 Slicer
The SE 12 is especially suited to large-calibre, heavy-duty slicing. A three-phase alternating-current motor makes a knife speed of 266 cycles per minute possible and guarantees a high performance and quality of slicing in combination with a hollow ground knife with hard chrome plating and an additional sliced produce support. The cutting thickness can be varied between 0 and 24 millimetres.
The knife can quickly be sharpened with an attachable grinder. And cleaning is also no problem due to the easy removal of the leftovers tray, knife cover and tilted carriage. The SE 12 was approved for safety and hygiene by an accredited test laboratory in accordance with EC Machinery Directive No. 89/392/EEC.
A 510: The First Intelligent Slicer
The integrated weighing function of the A 510 is the only one of its kind in the world: meat, sausage, cheese can all be weighed and cut exactly in line with the predefined weight. The Bizerba software continually compares the sliced weight with the target weight and regulates the slice thickness during the slicing process so that the target weight is achieved exactly. Even natural products, such as ham, can be sliced exactly to meet the specified weight. This makes it possible to meet the demands of various customers for fixed weight packages with minimum give-away, even for uncalibrated produce.
The FK 23 Meat and Bone Saw
The FK 23 meat and bone saw is used predominantly in butchers, preparation rooms and large-scale kitchens in order to break up and portion fresh and frozen meat, shanks and hollow bones.
The large-scale, open format of the table saw makes it quick and easy to clean. The belt and wheel scraper can be easily removed for this purpose and the saw band is quick to remove and re-fit using the swivel lever.
Hygienic Cleaning with Bizerba Stainless Steel Preservative
The stainless steel preservative from Bizerba is suitable for metal surfaces. The maintenance product quickly and easily removes finger prints and other signs of use, leaving behind a shiny gloss instead of traces of grease. The static inhibitors contained in the spray bottle actively prevent new contamination. As all the ingredients are of high quality, the special preparation is ideal for the food sector.
