Solly says first all the bottles that would normally end up in the wheelie bin at the end of every night go straight back to the local brewery to enter the recycling process and be used again. That dramatically decreases waste and other costs because the whole process takes place so close to the restaurant.
Second nearly all the money being spent on the Bourbon Street locally brewed beer stays in the Cairns economy in local jobs and local business. Studies have shown that each dollar that stays in a local economy this way can end up being worth about ten dollars in the area because of the way the employees and business owners benefiting spend their money with other local businesses.
