Bourbon Street Bistro and Bar are unique in Cairns offering both fine Cajun dining a fully licensed bar and more modestly priced meals along with live music from both local artists and musicians and from nationally and internationally renowned artists.

Owner of the restaurant and live music venue Will Solly says the number of bottles that would leave the premises entering the waste stream each day was alarming. Solly says the average licensed bar or club in Cairns would be disposing of hundreds of bottles each night.
Solly was eager for some time to have his own brand of Bourbon Street branded drinks both to improve the quality experience in his restaurant and bar and to make it possible to recycle the bottles that would otherwise either become landfill or go through a costly, energy hungry recycling process.
The Bourbon Street bar with their branded drinks now have the ecologically friendly advantage of collecting and recycling bottles as locally as possible. The bottles used in the restaurant and bar are collected on site and barely have to travel before they go through the full recycling process.
That''s an environmentally friendly recycling solution that''s also good business for the bar. Solly says many people talk about finding ways to help the environment but often the solutions are right in front of everyone. It just takes a little very simple innovation and some small commitments to turn waste streams into more environmentally friendly alternatives.
