He used that palette to create a menu of mouthwatering delicacies for this , which include: undhiyu (mixed vegetable curry), puris (deep-friend Indian bread), rasawala bataka (potato curry), Gujarati bhindi (okra), dal (lentils), kadhi (curd thickened with gram flour), khaman dhokla (savoury gram flour cake) and handwo (baked lentils, rice and sesame), along with desserts such as sukhadi (wheat, cane sugar and ghee), mohanthal (sweetened gram flour fudge), mang no halwo (dense mung bean "pudding"), magaj ke ladoo (flour, dough and sugar balls), gulabpak (rose petal sweet) and urdiapak (black gram flour sweet).
In addition to the traditional Gujarati dishes, Shakahari also offers Hyderabadi- and Awadhi-influenced vegetarian dishes such as paneer hara pyaz (cottage cheese cooked in onion and tomato), methi matar malai (green peas flavoured with fenugreek and finished with cream), and gulab ki kheer (basmati rice pudding cooked in rose milk and finished with candied rose petal confit).
