Cambodian cuisine with a Mediterranean touch
The Navutu Dreams offers the best of both culinary worlds with a delicious blend of Khmer and Mediterranean flavours inspired by the three Italian owners Manfredi, Maddalena and Giovanna de Lucia. Chef Vuthy has spent time working on yachts in Greece a few years ago. Since his return to Cambodia, he incorporates those experiences in his recipes and adds a Mediterranean touch, too.
Khmer Platter, Imperial Sweet Curry and “Paparo alla Melarancia“
The guests start their day with an Asian and Mediterranean breakfast, for example the “Khmer-Platter”, which includes Lemongrass Beef Rolls, Fresh and Fried Spring Rolls, Chicken Satay, Prawns and Mango Cocktail and Pork Mignon with bacon. The Imperial Sweet Curry is one of the specialties of Chef Vuthy. It is served in a delicious sauce of fresh coconut, lemon grass, ginger, turmeric, a little bit of garlic, French shallots, coriander and fennel. As a side dish they serve steamed Jasmine rice in a cleaned fresh coconut. “Paparo alla Melarancia” is inspired by an old Florentine recipe of the owners of Navutu Dreams. It includes braised duck and is served with elements of the Khmer cuisine, like orange sauce, sweet potato puree and a taste of cinnamon.
Authentic, organic, local
Three words identify the culinary offer at Navutu Dreams. It is an authentic blend of traditional and national Khmer cuisine with Mediterranean flavours. Only fresh and local ingredients are used, which are grown according to organic criteria. The pastas are homemade, the herbs are locally sourced and the meat is also acquired locally. The fresh tasting salads grow on the local fields and the organic rice is sourced from local farmers in Siem Reap. The seafood collection is delivered from Sihanoukville as well as from Lake Tonle Sap, the largest lake of South East Asia and one of the most fishful inland waters in the world.
Personalized service for the perfect gourmet experience
Not only because of the variety of cuisine offered at Navutu Dreams everybody’s wish will be satisfied. So meat can be seared, sauteed, steamed, barbequed and cooked in any way the guests prefer. There is also exquisite culinary Khmer food for the vegetarian. The Khmer food has some distinctive taste that comes from blending chiles and local herbs such as lemongrass, sweet basil and rice paddy herb. All these ingredients and a bit of lemon juice can turn a European salad into an exotic experience. The personalized service also works well with the guests’ food allergies or dietary restrictions.
