Peanut brittle is a sweet, crunchy candy containing sugar, corn syrup and peanuts. The syrup is cooked at a controlled temperature until it reaches caramel stage and then is poured over peanuts and allowed to harden before being broken into pieces. Peanut brittle recipes began appearing in cookbooks during the 19th century. Peanut brittle reportedly fueled soldiers for battle during the American Civil War era and has continued to be a popular snack ever since.
