Emile Goyer From Fairmont The Queen Elizabeth Wins National Jeunes Chefs Rotisseurs Competition
(firmenpresse) - MONTREAL -- (Marketwire) -- 11/15/11 -- On October 28, 2011, during the 50th anniversary celebrations of La Chaîne des Rôtisseurs, Bailliage du Canada, young cooks from across Canada met at Lasalle College in Montreal for the 2011 National Jeunes Chefs Rôtisseurs competition. Emile Goyer, cuisinier tournant at Fairmont The Queen Elizabeth won top honors. As the winner, he earned the right to represent Canada at the 2012 Concours International des Jeunes Chef Rôtisseurs in Berlin, Germany, next year.

"Emile brought his best efforts to the competition and impressed the judges with his technique and respect for tradition."
Goyer, a graduate of L'École hôtelière de Laval, believes that it is most important for young chefs to master traditional technique and learn the classics to better be able to reinvent them and add a personal touch. For the competition he prepared an entrée of sea urchins and skate, a main course of squab, and for dessert, a millefeuille of white chocolate ganache and pear with vanilla.
Working under the guidance of Executive Chef Alain Pignard, Goyer feels privileged to contribute to this world-class reputation, where he uses local, seasonal ingredients and sustainable products to help create distinctive dining experiences daily.
La Chaîne des Rôtisseurs promotes the training of young chefs worldwide through the Jeunes Chefs Rôtisseurs Competition. This annual event, open to chefs 27 years and under, offers them the opportunity to demonstrate their culinary skills in a competitive environment.
